Haven't found this used much in Oz, but is often used in the Pacific islands. If you have some tough meat to cook (cheaper cuts of beef, squid, octopus even Osso Buco) marinade in mashed paw-paw/papaya for a few hours before cooking. Even just paw-paw skins will do. The enzymes in the fruits break down the tough connective tissue and tenderise the meat. You can use kiwi fruit too. Hay, I like cooking, and this thread is for anything.

Another great thing about Melanesian cooking is the staple base ingredients of coconut milk, ginger, chilli and garlic. Used for cooking just about anything.
You can use them on their own as a therapeutic soup. It is great for colds and flu! (which I've been suffering from for the last week and found great relief from this.) Add some fresh lemon juice and maybe a stock cube for flavour.
But throw in some sweet potato, a tomato, onion, cooking bananas, cassava or yams, and meat of your choice, and you have a classic recipe for a mumu-style feast.

Interesting programme on SBS right now. A free-range and humane farmer is taking on Tesco's (biggest supermarket chain in the UK) with the challenge that he produce can better-tasting and cheaper meat products from free-range animals, than the factory farms. "Jimmy And The Giant Supermarket: Meatballs." If he passes the test, they've agreed to stock his products. I hope Coles and Woolies are watching.
If you miss it it'll be on SBS on-demand. Not for the squeamish however (eg. most dairy farms shoot unwanted male calves when they're 2 days old. But they make perfectly good veal.)

chookmustard - I recommend the Melanesian-style. Its tasty. Just leave out/cut back on the meat to reduce cholesterol, or switch to fish. Plenty of greens too. And beans. Steaming is better than frying. And forget MacDonalds and KFC. This site's good... www.taste.com.au/recipes/collections/lower+cholesterol+recipesInterestingly the Melanesian traditional diet was pretty healthy, but in the last 50 years or so since western-style diets became popular (with high meat and fat content) heart disease and diabetes have skyrocketed. The worst influence has been the introduction of cheap 'lamb flaps' from Australia. This is the fatty meat from a sheep's belly (more fat than meat). We dump them on the Pacific countries (as it's not popular here) and their health problems multiply exponentially. But anyway, good luck my friend.

When I lived in the Pacific islands, I used to love snake beans, but have not found them in Australia. They are a bit like thin runner beans, but with a more savoury flavour and a softer texture, and the ends look a bit like a snake's 2 eyes - hence the name.
They are also extremely good for you.

I could go for more fish. I'm fond of salmon steaks. I'm growing quite a bit of my own veggies at the moment. Really need to get some chili going

I actualy don't much like salmon. I can just bear grilled salmon, but really don't like smoked. I just don't like the flavour.
